The great thing about breakfast burritos is that they are not only tasty but loaded with proteins and nutrients that will supercharge your day.

They’re quick, delicious, and incredibly versatile!

Here’s a tip – these breakfast burritos are also freezable!

These are total lifesavers on those hectic mornings when every second count. Just take them out of the freezer, pop them into the microwave, and voila- a hot, nutritious breakfast ready in minutes!

Trust me when I say, it just doesn’t get easier than this!

Easy Breakfast Burritos

Prep time: 10 minutes
Cook time: 10 minutes
Serves: 4

Ingredients

1 T. olive oil

4 medium green onions, sliced

1-1/2 medium Green, red, or yellow bell pepper, chopped

6 large eggs

2 T. milk

Salt, black pepper, to taste

4 flour tortillas (7 to 8 inches in diameter), heated

1/2 c. shredded Cheddar or Monterey Jack cheese (2 ounces)

Directions

  1. Heat olive oil in 10-inch nonstick skillet over medium-high heat.  Sauté onions and bell peppers for 2 to 3 minutes, stirring occasionally, until crisp-tender.
  2. Beat eggs, milk, salt and pepper in medium bowl with fork or wire whisk until well mixed.  Pour egg mixture over vegetables in skillet. Reduce heat to medium. Cook 4 to 6 minutes, stirring frequently until eggs are set but still moist.
  3. Spoon egg mixture onto warm tortillas; sprinkle with cheese. Roll up tortillas.
  4. Enjoy!
