Mixing nutritious pistachios with hearty granola and tossing them with honey is pure magic.
This recipe has the goodness of protein-packed pistachios, fiber-filled oats, and vitamin-loaded honey combined – an absolute powerhouse of nutrients.
But why pistachios, ?
Well, pistachios are known to be lower in calories and higher in protein compared to other nuts.
They also have a lot of other health benefits, like being rich in antioxidants and promoting gut health.
And let’s just be honest here…they add a crunch and a beautiful hue to the bars.
The use of honey, is so much more than just a sweetener!
Honey acts as a natural binding agent, giving these bars their chewy texture.
It also gives that subtle sweetness that complements the nutty crunch of the pistachios just right!

Pistachio Granola Bars
Prep time: 10 minutes
Cook time: 20 minutes
Serves: 18-20 bars
Ingredients
2-1/4 c. rolled oats
3/4 c. shelled pistachios, roughly chopped
1/2 c. unsweetened shredded coconut
1/4 c. sesame seeds
1 c. dried unsweetened cranberries (like Craisins)
1/4 t. salt
5 T. coconut oil, melted
1/4 c. honey or agave syrup
2 t. pure vanilla extract
Directions
- Preheat the oven to 350° F. Line a half-sheet pan with a piece of parchment paper.
- In a large bowl, combine the oats, pistachios, coconut, sesame seeds, cranberries, and salt.
- Pour in the coconut oil, honey, and vanilla. Mix until all the ingredients are combined and evenly coated.
- Press the granola bar mixture into the prepared pan and smooth out the top.
- Transfer into the oven and bake 18-20 minutes until light golden brown.
- Remove from oven and let cool completely in the pan on a baking rack before slicing.
- Store leftover bars in an air-tight container at room temperature for up to 7 days.
