Ingredients:
- 2 tablespoons olive oil
- 2.5 pounds beef chuck roast
- 1 yellow onion
- 1 cup carrots
- 1 cup celery
- 8 cloves garlic
- 2 tablespoon Italian seasoning
- 2 tablespoons brown sugar
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 can beef stock
- 2 teaspoons paprika
- 2 bay leaves
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
- Fresh parsley, chopped (for garnish)
Directions:
Step 1
Preheat oven to 325°F.
Step 2
Heat olive oil in a large pan over medium-high heat.
Step 3
Pat the chuck roast dry, season with salt and pepper, and sear until golden-brown. Remove and set aside.

Add onion, carrot, celery, salt, and pepper to the pan. Cook for until soft.

Reduce heat to medium. Stir in garlic, Italian seasoning, paprika, tomato paste, brown sugar, and Worcestershire sauce. Cook for 2 minutes.

Push veggies aside, return the roast to the pan, and add any juices, beef stock, bay leaves, salt, and pepper.
