Ingredients
- 1.5 to 2 pounds salmon fillets, cut into bite-sized pieces
- 4 tablespoons salted butter
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon finely minced ginger or ginger paste
- ½ cup light brown sugar, packed
- ½ cup light soy sauce
- 2 tablespoons rice vinegar
- 2 teaspoons sesame oil
- ¾ pineapple juice
- 1 tablespoon cornstarch
- Sesame seeds
- 1 bunch green onions
Directions:
Step 1
Set salmon pieces out for 15–20 minutes before cooking. Pat dry and set aside.
Step 2
Heat 2 tablespoons butter and oil in a cast-iron skillet over medium-high heat. When the pan is hot, add some of the salmon pieces. Avoid overcrowding. Sear each side for about 2–3 minutes until golden but not overcooked. Remove and repeat with the remaining salmon pieces.
Step 3
Add the remaining 2 tablespoons of butter, garlic, and ginger to the pan. Sauté for 1–2 minutes over medium heat until fragrant.
Step 4
Whisk together brown sugar, soy sauce, rice vinegar, sesame oil, and pineapple juice in a small bowl. Pour the sauce into the skillet and bring to a simmer for 1–2 minutes.
Step 5
Dissolve cornstarch in 1 tablespoon water or pineapple juice. Stir the slurry into the sauce while whisking, and simmer for another 1–2 minutes until thickened.
Step 6
Return the seared salmon bites to the skillet and gently toss to coat in the sauce. Heat through for about 1–2 minutes.
Step 7
Garnish with sesame seeds and diced green onions. Serve immediately.
