Delicious caramelized onion, arugula and herb Grilled Cheese is light and refreshing but so satisfying.

What I love about this recipe is that it sounds fancy and complicated, but honestly, It’s as easy as pie and, in my opinion, even tastier!

Caramelized onions, arugula and herbs are a unique and tangy combo.

The sweet and deep flavors of caramelized onions perfectly complement the peppery freshness of arugula and the heavenly aroma of herbs.

Mayo Gourmet Grilled Cheese

Prep time: 5 minutes
Cook time: 15 minutes
Serves: Ingredients required per sandwich

Ingredients

3 T. mayonnaise
1 t. fresh parsley, chopped
1/4 t. dried oregano
2 slices sourdough bread
1 T. softened butter
2 T. caramelized onions, store bought or homemade
2 slices gruyere cheese
1/2 c. arugula leaves, roughly chopped (or baby arugula)
2 slices gouda cheese
1 c. cherry tomatoes, to serve

Directions

  1. In a small bowl, combine the mayonnaise, parsley, and dried oregano.
  2. Butter the outside of the slices of sourdough bread.
  3. Assemble the sandwich by layering the herbed mayo, caramelized onions, gruyere, arugula, and gouda between the non-buttered sides of the bread.
  4. Place the sandwich buttered side down on a non-stick frying pan and place over medium-low heat. Cook until golden-brown and crispy on both sides, approximately 6-7 minutes per side.
  5. Serve alongside cherry tomatoes or a simple salad.
  6. Enjoy!
